These steamed and peeled beets are very tasty, versatile and convenient. Added points for being a good vegan source of iron.
Beets pair well with salad greens, citrus and goat cheese. However, I usually just cut the beets into quarters and toss them with a little orange vinegar, olive oil and rosemary.
Note that the beet juice is messy and will stain your hands and clothes if you’re not careful. I usually cut a small corner out of the plastic wrap and drain and unwrap these over my sink. Also, beets will turn most foods they come in contact with purple, so best to add them at the last minute.
