Trader Joe’s Vegetable Panang Curry (vegan)

panangcurryThis is a really tasty curry dish due mostly to delicious sauce. Extra points for being vegan and low cost.

The rice is packaged in a separate compartment in the tray and cooks up nice and fluffy. The vegetables aren’t readily identifiable. I wouldn’t have known there are asparagus and kale in the mix unless I’d read the label.

The relative portions are a bit off. There is a lot of rice and sauce, but not many vegetables. However, both the rice and sauce are very good, so this works from a taste standpoint.

The only reason this curry won’t be a regular in my shopping basket is that it’s high in calories and not very filling – a bad combination that is due to the white rice (not filling) and coconut milk based sauce (high calorie). I could easily eat two of these in a single setting which would be nearly 1200 calories!
