Trader Joe’s Sai Tung Green Curry (vegan)

trader joe's sai tun green curryThe photo on the box didn’t look very appetizing to me so I put off trying this for several weeks. However, I’m happy to report that this is a very interesting and tasty dish.

The “vegetables” are morning glory, coconut shoots and banana flowers so I had no idea what to expect. The morning glory is a little stringy and chewy, but not unpleasant – sort of like bok choy. The coconut shoots were a bit tough and require some extra chewing effort. The banana flowers reminded me of summer squash.

The curry sauce is very flavorful, satisfying and pleasantly spicy. The kind of spiciness that slowly builds as you eat, but doesn’t become painful.

The rice is red gaba sprouted rice, which didn’t mean anything to me. However, it has great taste and texture and there’s just enough curry sauce to go with it.

This dish may not make it into my cart every week, but I’ll keep one in my freezer for when I want something a little different.
