Trader Joe’s Ricotta & Spinach Tortelloni with Red Pesto

tortelloniThis is one of my favorite Italian-style entrees from Trader Joe’s. The most pleasant and unexpected thing about this entrée is that the sauce isn’t a cooked tomato sauce. Instead it’s mostly halved cherry tomatoes, chunks of zucchini and red pepper, and basil. The result is a fresher taste and firmer texture than most frozen entrees.

This dish is a little high in calories and fat, but it’s really filling. Balance it out with fresh salad for a healthy meal.

Note: The ingredient label does not specify the source of the rennet in the cheese. Typically, I don’t post products with unspecified rennet, because they may not be vegetarian. However, I submitted an info request through the Trader Joe’s web site and the reply was that this product is made with microbial rennet.

    The entree has been permanently discontinued by this as of 2021.
