Trader Joe’s Organic Superfood Pilaf (vegan)

superfoodpilafFrom the name alone you know this is going to be super healthy – like vegan retreat in an old growth forest healthy!

Fortunately, this pilaf is also pretty tasty. All the pieces have distinct tastes and textures. The kale is bright green and the sweet potatoes aren’t too mushy so someone got the freezing process just right.

Could work as an entrée with some added garbanzo beans or baked tofu.

I need to add a little soy sauce or other salty seasoning for my taste and a splash of olive oil would be nice if you can spare the calories.

Disappointing that this isn’t officially vegan. All the ingredients are vegan, but the label says there may be traces of milk and wheat.
