Trader Joe’s Julienned Root Vegetables (vegan)

rootvegThis is a confusing and disappointing item. The name sounds like a vegetable side dish, but the photo and description seem like fries. However, these definitely don’t cook up like fries.

The beets and carrots are just too dense and wet and many of the pieces are very short – about 1 inch long. Plus, the mix is nothing like the photo. It’s mostly carrots, instead of an even mix of carrots, beets, parsnips and sweet potatoes.

When I followed the cooking instructions I ended up with a few crispy pieces of parsnips and sweet potatoes, but the carrots and beets were totally soggy. On my next attempt I increased the cooking temperature and time, but the carrots and beets still didn’t get at all crispy. Ends up being mostly like a cooked carrot dish with a few odd fries, which isn’t at all appealing.

    I made them in the air fryer and they were perfect! Try the air fryer
