Trader Joe’s Asian Vegetable Stir Fry (vegan)

stirfryfreshI love the idea of a quick, convenient and fresh stir fry mix. Unfortunately, Trader Joe’s Asian Stir Fry mix just doesn’t cut it.

The first issue is that it’s almost all peppers and onions so it seems more like a Mexican fajita mix than an Asian stir fry mix.

The second issue is that the snow pea pods are a mushy mess by the time the other ingredients even get warm. If you have the patience to pick out the snow peas, you can add them back in a the last minute.

However, the biggest issue with this stir fry mix is that it’s not fresh. I’ve purchased this a full week before the expiration date and the peppers are already a bit slimy and the mushrooms have dark spots. I’ve thrown it out 3 days before the expiration date, because it smelled bad.

Note that there is no sauce provided with this mix, so at a minimum you’ll need to have some oil and soy sauce on hand to add some flavor. I’ve tried TJ’s soyaki, but it’s a little heavy and overwhelming for fresh vegetables.
