Trader Joe’s Southwest Salad

southwestsaladThe Southwest Salad is my favorite pre-prepared salad at Trader Joe’s. 4 pineapples for this tasty, colorful, filling and low calorie salad.

The base is romaine lettuce and cabbage with black beans, corn, cotija cheese, red and green bell pepper and red onion. The dressing is yogurt based ranch.

I have my doubts that this salad is really only 200 calories, but regardless it’s still a healthy option. I often add cherry tomatoes or avocado, but this salad stands well as-is and doesn’t really need any extras.

Filling enough for a lunch entree and also makes a great accompaniment for Trader Joe’s frozen black bean & corn or cheese enchiladas.
