Trader Joe’s Ricotta & Spinach Cannelloni

cannelloniThis is a very rich and satisfying dish. Not surprising given that more than half the calories are from fat.

The crepe has a nice texture and the ricotta filling is tasty, but it’s the sauce (béchamel and tomato) that really makes this dish.

The serving size is too small for a meal, so you’ll want to add a salad or some sautéed greens. The later works especially well with the excess sauce from the cannelloni.

Does the cheese contain rennet, or unspecified enzymes? If so, it’s not vegetarian. That is one of the biggest mistakes people make. Not all cheese is vegetarian.

The ingredient label for this products specifies that the rennet is from a microbial source and doesn’t list any unspecified enzymes. If an item has animal sourced rennet I don’t include it on this site. If it’s not specified, I indicate this in my review.
