Trader Joe’s Spinach Salad Kit

spinachsaladkitThis is one of two salad kits (the other is Caesar style) Trader Joe’s offers in their produce section. 3 pineapples for these easy and long-lasting salad.

One of the best things about this salad kit is that because it’s spinach based it stays fresh longer than lettuce based salads. I typically eat my lettuce salads early in the week, before they brown, and save this one for later in the week.

As much as I enjoy this salad, I have to say that the amount of blue cheese provided is really skimpy. For this reason I typically use half the spinach, all the cheese, 2/3 the dried cranberries and pecans, 1/2 the dressing to make one nice salad.

I use the leftover spinach as a base for another salad the next day or add it to a pasta dish. The remaining cranberries and pecans make my morning oatmeal a special treat. I don’t usually use the remaining dressing, because it’s a little bit too sweet for my tastes.

Adding freshly sliced apple or pear and some freshly ground black pepper to this salad really takes it’s up a notch.
