These are my favorite frozen vegetables at TJ’s. The sauce is very good and the vegetables are hardy alone, but really good over polenta.
However, these vegetables are a bit challenging to cook. The green beans cook really fast, the whole mushrooms take forever to cook and the cherry tomatoes get dangerously hot inside.
I’ve found that if I mush the cherry tomatoes as they cook, they add to the sauce and I don’t risk scalding my mouth. I also accidentally discovered that if you over cook this, it’s actually better. The vegetables get a little charred and the sauce caramelizes, which just adds to the flavor.
